Our story
Saffron is loved, scarce, and badly supplied.
Nearly all of the world's natural saffron comes from one region and one fortnight of harvest. Prices swing with the weather; grades are rarely stated; adulteration is common enough that buyers test every delivery. We started Sunward because the fix was not a better field — it was a different system.
Why now
Three things changed at once. Clean-label demand turned natural colour and flavour from a premium into a requirement for many product lines. Climate volatility in the traditional growing regions made annual supply harder to forecast. And controlled-environment agriculture matured: the rooms, sensors and know-how that were exotic a decade ago are now ordinary equipment.
Put together, a high-value crop with a short, risky season became an obvious candidate for indoor production — if someone was willing to treat it with manufacturing discipline rather than romance.
How we got here
-
2022
Six rooms and a question
Could crocus be made to flower on a schedule? A converted warehouse outside Évora, six rooms, and a first cohort of corms.
-
2023
Three cycles, one answer
All three staggered cohorts flowered. The spread between rooms was small enough to plan allocations around.
-
2024
First full indoor harvest
The first commercially released lots, and the drying profiles that still run today.
-
2025
Fourteen rooms, two laboratories
Second build-out on a ten-year lease; independent grading of every lot begins.
-
2026
Rotterdam and the grading file
A commercial hub inside the EU, and lot SW-26-07 — the first released with per-batch measurements and a sealed retention sample.
